     Eggplant Italian Sandwich Patties
Ingredients:

1 large eggplant
Italian-flavored bread crumbs
1 large container ricotta cheese
Olive oil for frying
4 eggs
Parmesan cheese
Garlic salt
1 cup milk
16-oz can tomato sauce
1 envelope spaghetti sauce mix
3/4 cup water
DIRECTIONS:
In a bowl or large Pyrex measuring cup, combine tomato sauce, water and the spaghetti sauce mix, let stand.  Slice eggplant into 1/2 inch slices, pat slices dry with paper towels.  Mix 2 eggs with milk in a bowl, spread bread crumbs on a plate.  Heat olive oil in a deep frying pan.  Mix ricotta cheese with the other two eggs.  Put 2 tablespoons of the egg/cheese mixture in the middle of one eggplant slice and top with another to make a sandwich.  Dip the sandwich in the egg/milk mixture, then roll in the bread crumbs.  Place in the hot oil and and fry on both sides until both are golden brown.  Lay the sandwiches on paper towels to absorb extra oil, then place them in a greased baking dish, pour the spaghetti sauce over the patties,  sprinkle on parmesan cheese.  Bake at 350 for 35 minutes.  Sprinkle with a little garlic salt after you remove it from the oven.
