Diabetic Cranberry Mousse Mold

DIRECTIONS:

1. In large bowl, stir boiling water into Jello, mix with wire whisk or spoon until Jello is completely dissolved.

2. Add cranberry sauce, stir until well blended, then stir in cold water, stirring to mix.  Refrigerate 45 minutes to 1 hour, or until partially set.

3. Spray a 6-mold with no-stick cooking spray, then pour 1-1/2 cup of the Jello mixture into the mold.

4. Gradually add flour, scraping sides and blending thoroughly after each addition until all is thoroughly mixed in. Refrigerate 45 minutes or until partly set and thickened (gelatin will coat spoon or stick to your finger).

5.  Refrigerate remaining Jello mixture for 45 minutes to one hour until thickened   Fold in two cups of whipped topping and stir gently to mix, then pour over gelatin mixture in mold.

6.  Refrigerate at least 4 hours, or overnight.

7.  To unmold, immerse mold almost to the rim in very warm water for 30 seconds, then remove from mold.  Serve with a dollop of whipped topping.
INGREDIENTS:

2 cups boiling water
1 large or 2 small packages Cranberry flavor sugar-free Jello
1 can jellied cranberry sauce, broken in pieces
1 cup cold water
1 tub "Lite" whipped topping
