Beef Enchilada Casserole
Ingredients:
1 Lb. Ground Beef
1 Chopped Onion (med.)
Can Cream of Chicken soup
Can Cream of Mushroom soup
Can enchilada sauce (hot or mild)
Small can chopped green chilis
1/2 cup water
12 soft corn tortillas, torn in quarters
1/2 lb. Grated sharp cheddar cheese
Instructions:
1. Brown beef and onions in skillet.
2. Combine soups, enchilada sauce, chilis and water,
mix well.
3. In a greased, 9x13 baking dish, place a layer
of tortilla pieces.
4. Cover with half the ground beef/onion
mixture, then half the soup.sauce mixture.
5. Repeat layers with remaining ingredients, cover top
with grated cheese. Bake at 375° for 30 minutes.
Serves 4-6.
