Side Dishes
Zucchini Bars
Ingredients:
2 Eggs
5 Egg whites
4 cups shredded Zucchini
1-1/2 cups shredded fat-free Mozzarella Cheese
1 cup finely chopped Onion
1/2 cup grated Parmesan Cheese
1/2 cup flour
1 Tbsp. Dill weed
1/4 tsp. Baking powder
Instructions:
Preheat oven to 350º. Coat a 9x13" baking dish with no-stick cooking spray. In a large bowl, beat eggs and egg whites together.  Stir in zucchini, mozzarella, onions, Parmesan, flour, dlil and baking powder, mix well. Spoon into baking dish sprayed with no-stick spray. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Cool in pan for five minutes, cut into squares and serve warm or cold.

375° for 30 minutes. Serves 4-6 people.

This is a great recipe for diabetic or glycemic index diets, since it includes some protein plus "good" complex carbs, very little fat and even some fiber. It's also a great "combination" food.  If you're going to have something high in carbs or sugar, eat this first to slow the absorption of the sugar.
