  Spicy Vegetable Beef Soup
Ingredients:

1 lb. Beef stew meat, cut in 2-3” pieces or 1 lb. lean ground beef
2 Tbsp. Olive Oil
2 cups water
16-oz. can diced tomatoes (undrained)
8-oz. can tomatoes & green chiles (like Rotel)
1 tsp. Worcester sauce
3 Bouillion Cubes
(or 3 Tbsp. "Better than Bouillion"-type sauce.
2 Medium Onions, coarsely chopped
4 potatoes, cut in 2"-3" cubes
2 stalks celery, coarsely chopped
1-1/2 cups frozen corn
1-1/2 cups tiny baby carrots or sliced carrots
1/2 cup pearl barley
2 tsp. salt
1/2 tsp. black pepper
1 tsp. Cajun seasoning
1 tsp. Paprika
1 tsp. chili powder
Instructions:
Put olive oil in med. stock pot or Dutch oven. Add beef. Cook and stir til browned. Pour in water and bouillion.  Add both kinds of tomatoes, onions, all other vegetables and barley.  Bring to a boil, then lower heat and simmer 2 hours, until all vegatables are tender and meat is done through.  Serves 4-6.
