No-Bake Cheesecake Dessert
Ingredients:
2 Cups graham cracker crumbs
1/2 cup butter or margarine, melted
8-oz. Block cream cheese, softened
1 Cup sugar
3-oz. Package lemon gelatin dessert
1 Cup boiling water
2 Eggs, separated
12-oz. Can evaporated milk, chilled
(NOT sweeted condensed milk!)
Instructions:
Mix graham cracker crumbs and melted butter, reserving 1/4 cup of mixture.  Press remainder into a 9x13" baking pan (glass works best for this dish). Dissolve lemon gelatin in boiling water.  Mix softened cream cheese, sugar and egg yolks, beat until fluffy, then mix in gelatin until throughly blended.  Beat egg whites until stiff.  In a very large mixing bowl, whip evaporated milk ("high" speed on mixer) as stiff as possible. (It will stiffen more when chilled).  Fold in beaten egg whites, then fold in cheese/gelatin mixture until well blended.  Pour into prepared crust, sprinkle remaining crumb mixture over top.  Refrigerate until set (about 4 hours).  Cut into squares and serve. Serves 8.
