Spicy Mexi-Pasta Salad
Ingredients:
1 Box Whole Wheat Rotini or
Elbow Macaroni
(lower Glycemic Index than Semolina pasta)
1 cup cherry or grape tomatoes, halved
1 red bell pepper, cut into thin strips
1 large purple onion, thinly sliced
1 diced avocado
1/4 cup chopped cilantro
1 to 2 japaeno peppers to taste
(seeded and chopped)
1 cup reduced fat mayonnaise
1 cup tomato salsa
1 tablespoon lime juice
1/2 teaspoon salt
Instructions:
1. Boil pasta in large pan of water, drain and rinse with cold water, then drain again.
2. In large salad bowl, combine pasta, tomatoes, bell
pepper, onion, avocado, cilantro and jalapeno

For Dressing:
Whisk together in small bowl: mayonnaise, salsa,
lime juice and salt. Add to pasta mixture; toss gently.
Serve immediately or cover and refrigerate to chill.
