Mediterranean Salad
Ingredients:
15 oz. Can Chickpeas
1 Tomato, chopped
2 Roasted Red Bell Peppers
(cut in strips)
1/2 small red onion, thinly sliced
1/2 cucumber
(peeled and chopped)
2 Garlic cloves, chopped
or 3 Tsp. minced garlic
2 Tbsp. chopped parsley
3 Tbsp. lemon juice
1-1/2 Tsp. olive oil
1/4 Tsp. salt
Instructions:
Combine chickpeas, veggies and garlic in bowl. Add lemon juice, olive oil and salt, toss to coat well, let stand at least 15 minutes for flavors to blend.  Sprinkle with chopped parsley.

Only 104 calories per serving!
This tasty salad has very low carbs--and they're the "good" complex carbs you want in your diet. It  has almost no fat, and adds fiber to your meal, making it a great choice for either a diabetic or glycemic index diet.
