Ingredients:
2 Cups All-Bran type cereal
1-1/4 cup skim milk
1 egg
1/2 cup unsweetened applesauce
1/3 cup brown sugar
1 cup flour
1/2 tsp. salt
3/4 tsp. soda
1-1/2 tsp. baking powder
1/2 tsp. cinnamon
Optional: Stir in 1/2 cup raisins or chopped walnuts.
Instructions:
Mix bran cereal and milk, let stand 5 minutes until cereal softens.  In a small bowl, mix all dry ingredients.  Add egg, applesauce and brown sugar to cereal/milk mixture, mix well.  Gradually add dry ingredients to cereal mixture, mixing well each time.   Pour into muffin tin lined with paper muffin cups or coated with no-stick spray. Bake 20-25 minutes in 400º oven.  Makes 1 dozen muffins.  Best when served heated.  (To re-heat, set microwave on high for 25 seconds).  Spread with 1 tsp. no-fat cream cheese.

This recipe is great for adding fiber to your diet, and works well for glycemic index or diabetic diets.
