Side Dishes
Kentucky Biscuits
Ingredients:
1/2 cup Flour
1 Tbsp. Flour
2 Tbsp. Sugar
3 Tbsp. solid vegetable shortening
3 Tbsp. cold butter in bits
(Don't use margarine!)
3 Tbsp. dry milk powder
1 tsp. Salt
1/2 cup Buttermilk
(NOT sour milk!)
Instructions:
Combine everything except the buttermilk in a 2-qt. Bowl. Use a potato masher or wire whisk until it resembles fine gravel.  Make a well in t he center of dry ingredients and add buttermilk.  With a sturdy spoon, combine until moist and every dry particle has been absorbed by the buttermilk.  Dip hands in flour and knead the doug in the bowl until smooth and elastic (about 5 minutes).  Shaep into 7 patties about 1-1/2" thick and 3 inches in diameter.  Place one patty in center of a greased 8" rond cake pan, arranging the remaining six around the center one. Bake at 450º about 22 minutes, or until golden
 
A popular item on a certain fast food chain’s menu is their buttermilk biscuits.  The chain shall remain nameless, but their “secret recipe” for chicken has not been equaled by anybody else!
