Ingredients:
15-oz. Can Chickpeas
1/3 cup Tahini (sesame seed paste)
1/3 cup Lemon Juice
3 Garlic Cloves, chopped (or 3 tsps. minced garlic) 1/2 tsp. Salt
1/3 cup Red Onion, finely chopped
2 Tbsp. fresh or dried parsley
Instructions:
Combine chickpeas, tahini, lemon juice, garlic and salt in food processor. Pulse for 30 seconds to mix, then process for 2 minutes or until very smooth, scraping down the sides of the container as necessary.
Transfer to a serving dish and sprinkle with onions and parsley. Serve with strips of red bell pepper, sliced cucumber, celery, cauliflower, carrot sticks, zucchini, etc. for dipping.
