Ingredients:
4 Cups Green Leaf Lettuce, torn
1/2 cup Red Onion
(thinly sliced, slices quartered)
1 medium Tomato, chopped
1 small Bell Pepper
(seeded and chopped)
1/2 cup Feta cheese, crumbled
Dressing
1/2 cup Black Olives, pitted
1 Tbsp. Red Wine Vinegar
2 Tsp. Lemon Juice
1 clove Garlic, minced
1/2 Tsp. salt
1/2 Tsp. dried Oregano
1/2 Tsp. black pepper
1/4 cup Olive Oil
Instructions:
Combine dressing ingredients with olives in a small bowl. Cover and let stand at room temperature for 30 minutes.
Combine lettuce, onion, tomato and green pepper in salad bowl. Pour on dressing and toss lightly. Sprinkle with Feta cheese.
