Glycemic Index Diet Recipe
Cucumber-Onion Tuna Melt (Reduced Fat)
Ingredients:
1 small can chunk light tuna in water
(drained)
1/4 cup fat-free mayonnaise
1/2 cup cucumber
(peeled, seeded and finely chopped)
2 Tbps. red onion, finely chopped
1 tsp. grated lime peel
1/4 tsp. salt
2 Tbsp. reduced fat butter or
margerine, softened
4 slices reduced fat sharp cheddar cheese
4 slices whole wheat or rye bread
Instructions:
(1) Combine tuna and mayo in small bowl.  Mix cucumber, onion, lime peel and salt in separate bowl.  (2) Butter each slice of bread on 1 side.  Place to slices, butter side down on cutting board.  Top each with 1 slice cheese, tuna, cucumber/onion/lime mixture, another cheese slice and remaining bread slices, butter side up.  (3) Heat on large griddle or in large non-stick skillet over medium heat until golden brown and cheese is melted, turning once (about 3 minutes, each side).
