1/2 Cup crisp bacon, crumbled
1 small Diced Onion
1 cup raw potatoes, cubed
1/4 tsp. Paprika
3 Tbsp. flour
1/2 Tsp. Salt
1/2 Cup Chopped Celery
4 Tbsp. Diced Bell Pepper
2 Cup Water
1/2 Tsp. Thyme
3 Cup Milk
2 Cups frozen whole-kernel corn
Instructions:
In a heavy Dutch oven or kettle, saute bacon until crisp.  Remove bacon and reserve for garnish. Saute onion, celery and pepper until lightly browned.  Add potatoes, 2 cups water, salt and paprika.  Cook until potatoes are tender, then mash and stir to blend with cooked vegetables.  Stir flour into a small amount of the milk to make a smooth paste, then mix with remainder of milk and add to potato-vegetable mixture.  Add corn and heat until thickened.  Do not boil.  Sprinkle with bacon pieces and serve.  Serves 6.
