Main Dishes
Chicken Enchilada Casserole
Ingredients:
1.5 lb. Chicken breast tenderloins
1 Chopped onion (medium)
Can Cream of chicken Soup
1 Pint sour cream
1 Can Green sauce
Small can chopped green chilies
1/4 cup water
12 soft corn torillas, torn into quarters
1/2 lb. grated sharp cheddar cheese
Instructions:
Cut chicen into 2" strips, then stir-fry with onions in skillet until chicken is cooked through.  Combine soup with 1/4 cup water and mix well, then stir in green sauce and chilies.  In a greased, 9x13 baking dish, place a layer of tortilla pieces.  Cover with half the chicken/onion mixture, then half the soup/sauce/sour cream mixture. Repeat layers with remaining ingredients, cover top with grated cheese. Bake at 375° for 30 minutes.  Serves 4-6.
