  Chicken Alfredo with Broccoli
Ingredients:

1 Lb. boness chicken breasts, cut into bite-size pieces
3 Tbsp. olive oil
8 Ozs.Linguini noodles (half of a 1-lb. bag)
2 Cups fresh or frozen broccoli florets
(or less, to taste)
1 family-sized can cream of mushroom
or cream of chicken soup
1-1/4 cups milk
3/4 cup grated parmesan cheese

Cook pasta according to directions.  Add broccoli to boiling water for the last 3 minutes. Drain pasta/broccoli mixture.  While pasta and broccoli are cooking, put olive oil in skillet and heat. Add chicken, cook on medium heat until cooked through (5-8 minutes). Stir in milk and soup; bring to boil, stirring often to prevent sticking.  Stir in parmesan. Lower heat and simmer 1-2 minutes until sauce is well blended and heated through.  Add chicken mixture to pasta/broccoli and toss lightly to mix.  Sprinkle more parmesan cheese over mixture if desired.  Serves 4.

LOWER FAT VERSION: Substitute 2% or skim milk and low-fat soup.
