  Chicken Alfredo with Broccoli
Ingredients:

1 Lb. boness chicken breasts, cut into bite-size pieces
8 Ozs. Fettuccini noodles (half of a 1-lb. bag)
2 Cups fresh or frozen broccoli florets
3 Tbsp. olive oil
1-2/3 cups milk
4 ozs. Cream Cheese, cut into cubes
1/4 cup grated parmesan cheese
Instructions:
Cook pasta according to directions.  Add broccoli to boiling water for the last 3 minutes. Drain pasta/broccoli mixture.  While pasta and broccoli are cooling, put olive oil in skillet and heat. Add chicken, coko on medium heat until cooked through (5-8 minutes). Stir in milk and cream cheese; bring to boil, stirring constantly.  Lower heat and simmer 1-2 minutes until cheese melts, sauce is well blended and heated through.  Add chicken mixture to pasta/broccoli and toss lightly mix.  Sprinkle parmesan cheese over mixture and toss lightly.  Serves 4.

LOWER FAT VERSION: Substitute 2% or skim milk and neufachatel cheese instead of cream cheese.
