Hamburger Soup
Ingredients:
3 Tbsp. Butter
1 Med. Onion, chopped
1-1/2 lbs. Ground Beef
12-oz. Can Tomatoes
3 soup-size cans beef broth
2 soup cans water
1-1/2 cups baby carrots
1 Bay Leaf
2 stalks celery with tops - chopped
3 Tbsp. dried parsley
1/2 Tsp. Thyme
1/2 Tsp. Black Pepper or
10 Peppercorns
1 Tbsp. Salt
Instructions:
Melt butter and saute onion; add beef and brown.  Add tomatoes, broth and water.  Add other ingredients.  Cover and bring to a boil, then lower heat and simmer for 30 minutes.  Remove bay leaf.  Add macaroni and cook for 15 more minutes.  Sprinkle Parmesan cheese on top, if desired.  Serves 6-8.
