5 (pre-cleaned) hanger steaks
salt & pepper (on steaks)
3 lemons
3 oranges
3 limes
1/8 cup fish sauce or Worcestershire sauce
6 cloves garlic, crushed
1/4 stalk ginger, sliced thin
1/8 cup thyme, chopped
1/8 cup black peppercorns
1 Tbsp. sugar

1. Juice all fruit into one container. Save the peels
2. Add fish/Worcestershire sauce, chopped thyme and sugar, stir.
3. Put salted and peppered steaks in large, flat pan such as a baking pan, spread ginger slices and peppercorns over top.
4. Pour citrus juice mixture over steaks, spread citrus peels over
steaks also.
5. Marinate overnight.
6. Grill steaks to medium temperature and serve.
