INGREDIENTS:

2 cups flour
1 cup sugar
1-1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup orange juice
1 tablespoon orange zest
2 tablespoons shortening
1 egg
1 teaspoon cinnamon
1-1/2 cups chopped cranberries
1/2 cups walnuts (optional)
Cranberry Orange Bread

INSTRUCTIONS:

1. Preheat oven to 350 degrees F.

2.  Mix flour, sugar, baking powder, salt and baking soda.  Stir in orange juice and zest, shortening and egg.  Mix until well blended.

3.  Add cranberry and nuts, stir to mix.  Pour into loaf pan or two mini-loaf pans, bake for 55 minutes.  (Mini loaves seem to need the same amount of baking time.)
